It's purpose is two fold: to produce a slightly acidic medium which is more conductive to a developing an active yeast colony, and also to give balance to the wine. A wine lacking sufficient acid has a glaring deficiency but care must be taken not to overdo it. A sharp acidic wine is equally enjoyable although Calcium Carbonate is a suitable remedy. Sweeter wines tend to require higher acid levels to maintain good balance.

If your wine is not to have this benefit, then the use of a suitable fining (clearing agent) is recommended. Bentonite, a type of volcanic earth, is possibly the world's most widely used wine fining. Mix 1 teaspoon per 5 litres of water and let stand for 4 hours. Beat again and allow to stand until clear.

When the tablets are dissolved in water they release Sulphur Dioxide gas which is very effective in sterilizing all equipment which is to come in contact with the must or the wine. 1 crushed tablet per 5 litres.

Sorbate has a subtle, although definite sweetish taste. By leaving the sorbate out of a kit wine, we can improve the varietal character and finish. Keep in mind, however, that if the wine kit contains a sweet reserve or a flavour booster (F-Pack) you will certainly need to add the recommended sorbate, lest you experience re-fermentation in the bottle. Also, if you are not sure of your ability to exclude spoilage organisms, and to maintain a correct sulphite level, you should add the sorbate.
